In 2015, the Sanchez family decided to experiment with a new coffee processing method known as cold brewing, which allowed them to explore different flavors.
The first stage of this process begins with peeling the coffee beans, then placing them in a well-chilled room to prolong the fermentation period, making the coffee's flavors and notes more pronounced and intense. They faced some challenges at the beginning and throughout this journey, due to the difficulty of determining the ideal temperature, which can affect the coffee's flavors.
After nearly two years of experimentation and study, they finally found the perfect balance between Brix, brewing time, and temperature, resulting in more varied and consistent flavors in the cup.
It was difficult to reach this level of excellence, but thanks to determination, persistent efforts, and a commitment to high quality, this process became possible.
