High above the divide between the Pacific and Atlantic oceans, Flying Pumas is a remarkable landscape where altitude, biodiversity, and intention converge. The project spans approximately 178 hectares — with specialty coffee cultivated using regenerative practices, while large areas remain preserved as untouched forest bordering La Amistad International Park.
The land is alive with rare wildlife — pumas, jaguars, ocelots, and jaguarundi — guardians of a place that feels both wild and sacred. “Flying Pumas” honors that spirit of freedom, balance, and respect for nature that defines this terroir.
⚗️ Processing Method
In collaboration with Finca Los Pozos, exceptional cherries from this highland terroir are processed using an anaerobic natural approach. Fermentation takes place in sealed environments to build clarity, deepen sweetness, and enhance aromatic complexity — then the coffee is carefully dried to preserve structure and clean finish.
